Why kadai paneer is different from other paneer curries

Kadai paneer gets its name from the kadai โ€” the Indian wok โ€” and the technique of cooking over high heat. The defining characteristics are: freshly ground kadai masala (not pre-made powder), crunchy capsicum that retains its texture, and a semi-dry consistency rather than a saucy gravy. Most restaurant versions produce a soft, saucy dish. The authentic version has texture at every level โ€” the char on the paneer, the crunch in the capsicum, the coarseness of the freshly ground masala.

How to make it โ€” step by step

Step 1
Dry-roast and grind the kadai masala

In a dry pan over medium heat, roast coriander seeds and dried red chillies until coriander seeds turn a shade darker and smell intensely aromatic โ€” about 2 minutes. Do not burn. Cool, then coarsely grind โ€” not a fine powder. Keep some texture.

Step 2

Step 3
Build masala and cook tomatoes

In the same pan, add more oil if needed. Add onion petals โ€” cook 2 minutes on high heat, keeping some crunch. Add ginger-garlic paste, cook 1 minute. Add tomatoes, turmeric, Kashmiri chilli. Cook on high heat until tomatoes soften and oil begins to separate โ€” about 8 minutes.

This is fundamentally different from finely chopped onion cooked slowly. The textural contrast between the softened tomato base and the crunchy onion petals is structural to the dish. Cooking over high heat throughout prevents the onion from steaming in its own moisture, which would eliminate the crunch.

Step 4
Add capsicum, paneer and finish

Can I use a regular pan instead of a kadai?

What is the difference between kadai paneer and capsicum paneer?

Why does my kadai paneer turn soggy?
Excess moisture from tomatoes not cooked down sufficiently, capsicum overcooked (releasing its water content), or too much oil preventing the high-temperature char. Cook tomatoes until fully reduced, keep capsicum cooking time to 3 minutes, and use only enough oil for the pan.
Can I add gravy to kadai paneer?
Kadai paneer is traditionally semi-dry. If you prefer a gravy version, add 100ml of water or tomato puree after the bhuno stage and simmer 5 minutes before adding the capsicum and paneer. This is a valid variation but changes the character of the dish significantly.
